ZENB Pasta Variety

Aglio e Olio is a traditional dish from Naples, Italy typically made with spaghetti, however, using ZENB Penne Pasta gives this dish an elegant modification. Aglio means garlic and Olio means oil in Italian, which is exactly what is used in this recipe. Burrata is a delicious cow's milk soft cheese that is made with cream and is very flavorful. Together with the Aglio and the Olio this delicious cheesy dish turns into a decadent dinner. It is also a good source of fiber and low in calories.

INGREDIENTS

  • 12 ounces ZENB Yellow Pea Penne Pasta, uncooked
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 teaspoon crushed chile flakes
  • 1/4 cup chopped chives, Italian parsley or basil
  • 1/4 pound burrata cheese

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Reserve 1 cup pasta cooking water; drain.

Meanwhile, add oil, garlic and chiles to large skillet on medium heat. Cook 4-5 minutes, stirring occasionally until edges of garlic begin to brown.

3. Stir in reserved pasta water, pasta and chives. Mix gently until heated through and most liquid is evaporated. Top with cheese before serving.

Tasty Tips

Substitute fresh mozzarella, cut into bite-size pieces for the burrata.
