ZENB Pasta Variety

Earthy and subtle oyster mushrooms are the main character in this pasta dish using ZENB Linguine. Whip this recipe together in 30 minutes for a good source of fiber.

INGREDIENTS

  • 8 ounces ZENB Yellow Pea Linguine, uncooked
  • 1 ounce pancetta, finely chopped
  • 8 ounces oyster mushrooms, stems trimmed, torn into large bite-size pieces
  • 1 small shallot, thinly sliced
  • 2 cups coarsely chopped radicchio
  • 1 tablespoon unsalted butter
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons toasted pine nuts

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Reserve 1/4 cup of pasta cooking water; drain.

Meanwhile, heat pancetta in large skillet on medium-high heat. Cook 2-3 minutes until crisp; transfer to clean plate. Add mushrooms to same skillet; cook 5-7 minutes, or until golden-brown. Add shallots; cook 1-2 minutes until tender. Stir in radicchio; toss gently until tender.

Stir in pasta, reserved pasta water and butter. Cook 1-2 minutes, until sauce thickens. Top with pancetta, parsley and pine nuts before serving.

Tasty Tips

Other mushroom varieties that would work in this recipe include sliced white button, cremini, or shiitake mushrooms.
