ZENB Pasta Variety

When you are craving the taste of fall, this dish will cure your craving. Shitake mushrooms, creamy pumpkin, and ZENB Pasta Agile combine with flavorful curry to create the warmth necessary to start the season off just right. This dish is earthy and hearty while still being low in calories, low in fat, and a good source of fiber.

INGREDIENTS

  • 1 teaspoon olive oil
  • 8 ounces shiitake mushrooms, stemmed and sliced
  • 1 small red bell pepper, finely chopped
  • 1 1/2 cups unsalted vegetable broth or stock
  • 1/2 cup pumpkin puree
  • 1 teaspoon curry powder
  • 1/2 teaspoon vegan fish sauce
  • 12 ounces ZENB Pasta Agile, uncooked
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fried shallots
  • 1 lime, cut into wedges

INSTRUCTIONS

Heat oil in large skillet on medium-high heat. Add mushrooms; cook 5-7 minutes, or until golden-brown. Add bell pepper; cook 3-4 minutes until tender.

Stir in broth, pumpkin, curry powder and fish sauce; bring mixture to a boil. Stir in ZENB Pasta; cook covered 2 minutes, or until pasta is tender. Remove pan from heat.

Top with cilantro, fried shallots and lime wedges before serving.

Tasty Tips

Shop fried shallots at an Asian market or online.

Vegan fish sauce can usually be found in the condiments section of your local grocer or online. It is usually made with shiitake mushrooms, seaweed and coconut aminos. Substitute vegan fish sauce with gluten-free tamari sauce.
