Classic Cacio e Pepe gets a Korean spin with a spicy rendition of the comfort classic showcasing ZENB Spaghetti. Ready in 15 minutes, this dish is a good source of protein and a good source of fiber.
- 1 box (8 ounces) ZENB Spaghetti made with 100% Yellow Peas
- 2 tablespoons extra virgin olive oil
- 1/3 cup finely grated Pecorino Romano cheese plus additional for serving
- 1/3 cup finely grated Parmigiano-Reggiano cheese
- 1 tablespoon gochujang
- 2 green onions, thinly sliced
Cook ZENB Pasta as directed on package. Reserve 1/3 cup pasta cooking water. Drain pasta; return to pot. Remove pan from heat.2.
Whisk reserved pasta water, olive oil, cheese and gochujang in small bowl. Stir mixture into warm pasta. Toss continuously until evenly coated. Serve immediately, topped with green onions and additional cheese.
Gochujang is a flavorful fermented Korean chili pepper paste available online or in the Asian sauce section of a well-stocked grocery store.
This recipe is a Korean-inspired interpretation of the classic Roman dish, cacio e pepe. The creamy cheese mixture helps to tame the fiery heat of the gochujang.
