ZENB You Pick It Pack

We partnered with @shack_fitwho created a delicious recipe for baked lemon garlic salmon over a bowl of ZENB Rotini Pasta sautéed with broccoli, grape tomatoes, garlic, and olive oil. He was excited to share this recipe which includes our gluten free pasta alternative made with a single ingredient, the yellow pea.

INGREDIENTS

  • 4 cups broccoli florets
  • 1 cup grape tomatoes, halved
  • 4 tablespoons olive oil, divided
  • 2 tablespoons fresh garlic, diced
  • 1 lemon
  • 1 salt & pepper
  • 4 salmon fillets (wild preferred), about 16 ounces
  • 1 box ZENB Rotini Pasta
  • 1 teaspoon dried parsley
  • 1 tablespoon dried basil

INSTRUCTIONS

Preheat oven to 350F. Prep all the vegetables and place off to the side. Take out a small mixing bowl and add 2 tbsp olive oil, 1 tbsp garlic, half a lemon (squeezed), and a dash of salt & pepper. Whisk thoroughly. Take out a baking sheet and line it with parchment paper. Place the salmon onto the baking sheet and brush the olive oil mixture all over the salmon generously. Place into the oven and bake for 20 minutes.

Bring a large pot of water to a boil and add ZENB Pasta and salt to taste. Cook uncovered for 10-12 minutes or until it reaches desired texture. Drain and set off to the side. Add remaining olive oil to a large skillet and heat over medium. Add remaining garlic, broccoli, grape tomatoes, parsley, basil, and a dash of salt & pepper to skillet. Stir frequently and cook for about 10 minutes.

Stir in the pasta with the vegetables and cook for another 2 minutes. Remove from heat and set off to the side. Serve the pasta sauté in bowls and top off with salmon filets. Enjoy!
