ZENB Pasta Variety
Salty guanciale, ZENB Spaghetti, and cherry tomatoes create a mouthwatering dish that is light and decadent. It is also a good source of fiber and low in calories.
INGREDIENTS
- 8 ounces ZENB Yellow Pea Spaghetti, uncooked
- 1 teaspoon olive oil
- 2 ounces guanciale, cut into 1/4-inch cubes
- 3 cloves garlic, thinly sliced
- 1/4 teaspoon crushed red pepper flakes
- 12 ounces cherry tomatoes, halved
- 1/8 teaspoon each kosher salt & ground black pepper
- 1 tablespoon Pecorino Romano
- 1 tablespoon chopped fresh basil
INSTRUCTIONS
1.Cook ZENB Pasta as directed on package. Reserve 1/2 cup pasta cooking water; drain.
2.Heat oil in large skillet on medium-high heat. Add guanciale; cook 3-4 minutes, stirring occasionally, until crisp. Add garlic and crushed red pepper flakes; cook 1 minute, until fragrant. Stir in tomatoes, reserved pasta water, salt & pepper. Reduce heat to medium-low. Cook 15-20 minutes, stirring occasionally, until tomatoes burst and sauce thickens.
3.Add cooked pasta; toss gently until evenly coated. Sprinkle with cheese and basil before serving.
Tasty Tips
Amatriciana is a classic Italian dish originating in Amatrice. It gets its flavor from the key ingredients of guanciale, spicy chiles, and Pecorino Romano cheese. Guanciale is a flavorful Italian salt-cured pork cheek with a high fat content. It is available at specialty deli counters, butchers or well-stocked grocery stores.
Substitute pancetta for guanciale.
