ZENB Pasta Variety
ZENB Spaghetti is the perfect complement to seafood! This dish is a spicy seafood delight, with spicy arrabbiata sauce. It is also low in calories, a good source of fiber and a good source of protein.
INGREDIENTS
- 8 ounces ZENB Spaghetti Pasta made from 100% Yellow Peas, uncooked
- 1-1/2 teaspoons olive oil
- 1 small shallot, minced
- 3/4 teaspoon crushed red pepper flakes, divided
- 2 cups no sugar added jarred tomato sauce
- 1/4-pound medium raw shrimp, peeled, deveined (31/35 count)
- 1/4-pound bay scallops
- 1 tablespoon chopped fresh basil
INSTRUCTIONS
1.Cook ZENB Pasta as directed on package. Reserve 1/4 cup of pasta cooking water; drain.
2.Meanwhile, heat oil in large skillet on medium-high heat. Add shallot and 1/2 teaspoon crushed red pepper flakes. Cook 1 minute, stirring frequently, until softened. Stir in sauce and reserved pasta water. Cook 4-6 minutes, stirring frequently, until sauce thickens slightly. Add shrimp and scallops; cook 4-5 minutes, stirring frequently until done. Add pasta; toss gently until evenly coated.
3.Sprinkle with basil and remaining crushed red pepper before serving.
Tasty Tips
Substitute Calabrian chili paste for the crushed red pepper flakes for a flavorful, smoky kick.
