Shrimp and Scallop Spaghetti Arrabbiata

ZENB Spaghetti is the perfect complement to seafood! This spicy delight incorporates ZENB Roasted Tomato Gourmet Pasta Sauce for an extra burst of garlic and basil flavor. It is also low in calories, a good source of fiber and a good source of protein.
- 1 box (8 ounces) ZENB Spaghetti Pasta made from 100% Yellow Peas
- 1-1/2 teaspoons olive oil
- 1 small shallot, minced
- 3/4 teaspoon crushed red pepper flakes, divided
- 1 carton (15.5 ounces) ZENB Roasted Tomato, Garlic & Basil Gourmet Pasta Sauce
- 1/4-pound medium raw shrimp, peeled, deveined (31/35 count)
- 1/4-pound bay scallops
- 1 tablespoon chopped fresh basil
Cook ZENB Pasta as directed on package. Reserve 1/4 cup of pasta cooking water; drain.2.
Meanwhile, heat oil in large skillet on medium-high heat. Add shallot and 1/2 teaspoon crushed red pepper flakes. Cook 1 minute, stirring frequently, until softened. Stir in ZENB Pasta Sauce and reserved pasta water. Cook 4-6 minutes, stirring frequently, until sauce thickens slightly. Add shrimp and scallops; cook 4-5 minutes, stirring frequently until done. Add pasta; toss gently until evenly coated.3.
Sprinkle with basil and remaining crushed red pepper before serving.
Substitute Calabrian chile paste for the crushed red pepper flakes for a flavorful, smoky kick.
