Sweet peppers and vegan chorizo bring the zest to ZENB Spaghetti for a savory filling treat for your taste buds. It is also a good source of fiber, low in calories and ready to devour in less than 30 minutes.
- 1 box (8 ounces) ZENB Spaghetti made from 100% Yellow Peas
- 1/2 pound vegan chorizo
- 4 cups mini sweet peppers, cut into 1/4-thick rings (about 1/2 pound)
- 1/2 cup crumbled queso fresco cheese
- 1 cup loosely packed cilantro leaves
- lime wedges
Cook ZENB Pasta 1 minute less than directed on package. Reserve 1/2 cup pasta cooking water. Drain.2.
Meanwhile, cook chorizo in large nonstick skillet lightly sprayed with oil on medium-high heat until browned. Add peppers; cook, 2-3 minutes until crisp-tender. Add reserved pasta water and ZENB Spaghetti.3.
Mix gently until well combined. Sprinkle with cheese and cilantro before serving with lime wedges.
Traditional Mexican chorizo is a raw highly seasoned pork sausage often utilized in dishes for its flavor and drippings. The plant-based version used in this recipe adds the same punch of flavor yet is suitable for a vegetarian diet.
Vegan chorizo is available in the alternative meat section or freezer aisle of well-stocked grocery stores.
