We took the viral brown butter and cinnamon pasta recipe and zhooshed it (call us extra, we'll own it!). Ready in under 30 minutes and made with ZENB Rotini, this sweet and savory dish is an excellent source of fiber and a good source of protein.

INGREDIENTS

  • 1 box (12 ounces) ZENB Rotini Pasta made from 100% Yellow Peas
  • 3 tablespoons unsalted butter
  • 2 tablespoons packed dark brown sugar
  • 3/4 teaspoon ground cinnamon
  • 2 tablespoons chopped toasted hazelnuts
  • 2 tablespoons chopped dried cranberries
  • 1 lemon, zested
  • 2 1/2 teaspoons ZENB Final Flair Herby Olive Oil infused with basil

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Reserve 1/2 cup of pasta cooking water; drain.

Meanwhile, melt butter in large deep skillet on medium-high heat. Cook 2-5 minutes, swirling pan occasionally, until light golden-brown and nutty. Add pasta, reserved pasta water, sugar, and cinnamon. Cook 1-2 minutes, until sauce is evenly coated.

3.

Sprinkle with hazelnuts, cranberries, and lemon zest. Drizzle with ZENB Final Flair Oil before serving.

Tasty Tips

Substitute coconut sugar, honey, or agave for brown sugar!

Browned butter adds a subtle nutty and rich flavor to both savory and sweet dishes. Use a light color skillet, when browning to easily see when the butter is toasted. When the butter is golden-brown and aromatic it is ready to use.
