ZENB Rotini Pasta
Miso butter stars in this dish packed with umami flavor. It shines beautifully when tossed with roasted corn and ZENB Rotini Pasta. This dish will be on the table in under 20 minutes and is a good source of fiber and low in fat.
- 1 box (12 ounces) ZENB Rotini Pasta made with 100% Yellow Peas, uncooked
- 2 tablespoons unsalted butter
- 2 tablespoons miso paste
- 1-1/2 cups frozen fire-roasted corn kernels, thawed
- 2 tablespoons finely chopped chives
- freshly ground black pepper
Cook ZENB Pasta as directed on package. Reserve 1 cup pasta cooking water; drain.2.
Add butter and miso to large skillet on medium heat. Cook 2-3 minutes, stirring occasionally until butter is melted. Stir in reserved pasta water; add pasta and corn. Mix gently until heated through and well combined.3.
Sprinkle with chives and pepper before serving.
Substitute kernels removed from about 3 ears of grilled corn for the frozen corn.
