ZENB Elbows Pasta

INGREDIENTS

  • 1 box (12 ounces) ZENB Elbows Pasta made with 100% Yellow Peas, uncooked
  • 3/4 cup low-fat Greek yogurt
  • 1 small shallot, minced
  • 1/4 cup chopped fresh dill, plus additional sprigs for serving
  • 1 large lemon, juiced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2cup frozen sweet peas, thawed
  • 4 ounces smoked salmon, coarsely chopped

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Rinse pasta under cold running water until chilled. Drain well.

Meanwhile, whisk yogurt, shallot, dill, lemon juice, salt and pepper. Combine yogurt mixture with pasta, peas and smoked salmon; toss to coat. Top with additional dill sprigs before serving.

Tasty Tips

Substitute 1 can drained albacore tuna for the smoked salmon.
