ZENB Elbows Pasta
This gluten free Cauliflower Mac and Cheese recipe uses ZENB Elbows Pasta to deliver a delicious dish that is high in protein and fiber. The cheesy flavor will leave you wanting more and may be your new go-to dish all year long. This recipe also provides a good source of calcium and iron.
- 1 box (12 ounces) ZENB Elbows Pasta made from 100% Yellow Peas, uncooked
- 1 small head cauliflower, trimmed, cut into small florets
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped Italian parsley
Cook ZENB Pasta as directed on package. Reserve 2 cups pasta cooking water; drain.2.
Meanwhile, combine pasta water and cauliflower in same pot on medium heat. Cover and cook 12-15 minutes or until florets are fork-tender. Cool.3.
Transfer cooled cauliflower mixture to blender jar. Blend 30-45 seconds on high speed until smooth. Pour mixture back into pot; add cheeses. Cook 2-3 minutes on low heat, stirring occasionally until heated through. Add pasta; mix gently until well combined. Garnish with parsley before serving.
Add 1 garlic clove to the broth mixture for a subtle garlic flavored dish.
