ZENB Pasta Variety
When the cookout leaves you with leftovers, you create a smoky and sweet BBQ dish made with ZENB Elbow Pasta. This dish is also a good source of protein and a good source of fiber.
INGREDIENTS
- 12 ounces ZENB Elbows Pasta made from 100% Yellow Peas, uncooked
- 1/2 cup barbecue sauce
- 1 cup sweet mini peppers, cut into rings
- 1/2 cup thinly sliced red onion
- 3 cups shredded rotisserie chicken
- 1 cup, shredded cheddar cheese
- 1/2 cup loosely packed cilantro leaves, coarsely chopped
INSTRUCTIONS
1.Cook ZENB Pasta as directed on package. Reserve 1/2 cup pasta cooking water. Return pasta to pot.
2.Stir in reserved pasta water, barbecue sauce, peppers, onions, chicken. Cook 2-3 minutes on medium-low, until heated through. Remove pot from heat. Top with cheese; cover until cheese is melted.
3.Sprinkle with cilantro before serving.
Tasty Tips
This is a great dish to make with cookout leftovers. Substitute grilled chicken breast, sausage or grilled salmon, for the rotisserie chicken. Grilled veggies, cut into bite-size pieces, make a great addition to the peppers and onions.
Top with crushed corn chips before serving for some crunch.
