ZENB Pasta Variety

Enjoy a vegan, gluten-free pasta salad using ZENB Rotini Pasta and a homemade kale pesto. This recipe provides a good source of fiber and is a delicious way to enjoy your ZENB Pasta while getting in your greens.

INGREDIENTS

Ingredients
  • 2 cups ZENB Rotini Pasta made from 100% Yellow Peas, uncooked
Kale Pesto
  • 1 cup Tuscan kale leaves, ribs removed
  • 2 tablespoons toasted pepitas
  • 2 tablespoons nutritional yeast
  • 1 large lemon, zested, juiced
  • 1 clove garlic
  • 1/8 teaspoon crushed red pepper
  • 2 tablespoons olive oil
Salad
  • 4 cups torn baby salad green
  • 1 small zucchini, cut into thin ribbons
  • 2 tablespoons toasted pepitas

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Rinse pasta under cold running water until chilled.

Meanwhile, combine all ingredients for pesto, except olive oil, in work bowl of a small food processor. Pulse 5-10 seconds or until coarsely chopped. Add olive oil; process for 10-15 seconds until smooth.

Combine cooled pasta, pesto and salad greens in large serving bowl. Add zucchini ribbons; toss gently. Sprinkle with pepitas before serving.

Tasty Tips

Pepitas are hulled dried pumpkin seeds. They are often sold in the produce or bulk section of the grocery store.

Make zucchini ribbons with a standard vegetable peeler or mandoline slicer set to the thinnest setting.

Chilling the ZENB Pasta under cold running water as directed in our recipes produces the best pasta texture in cold applications. This recipe is best served immediately, as opposed to preparing ahead to refrigerate overnight.
