This gluten-free recipe is a simple way to enjoy your ZENB Rotini Pasta. Low in a calories and fat, this dish combines roasted broccoli with lemon and other seasonings to deliver a delicious flavor. You will love the simple flavor while enjoying a good source of fiber and vitamin C.

INGREDIENTS

  • 1 large head broccoli, cut into small florets
  • 100% olive oil spray
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1 box (12 ounces) ZENB Rotini Pasta made from 100% Yellow Peas, uncooked
  • 2 cloves garlic, finely grated
  • 1 lemon, zested, juiced
  • 4 ounces crumbled feta cheese

INSTRUCTIONS

Preheat oven to 425°F. Spread broccoli in single layer on rimmed baking sheet. Spray lightly with olive oil spray. Sprinkle with salt, black pepper and red pepper flakes. Bake 15-20 minutes or until edges begin to brown and broccoli is tender.

Cook ZENB Pasta 1 minute less than directed on package. Reserve 1 cup pasta cooking water. Drain; return pasta to pot.

Add broccoli, garlic, lemon zest and juice to pot. Cook on medium heat 1-2 minutes while tossing gently, adding reserved pasta water in 1/4 cup increments as needed until pasta is tender. Remove pan from heat; stir in feta cheese before serving.

Tasty Tips

Add a pop of color by swapping in cauliflower for all or part of the broccoli. Crumbled goat cheese or shredded Parmesan make great substitutes for the feta.
