Heat up the kitchen with Spicy Green Onion Fried ZENB Spaghetti with Ricotta. ZENB Spaghetti is fried up with green onions and chili paste and topped with creamy ricotta for a flavorful dish that is ready in 40 minutes. This dish is low in fat, low in calories, and a good source of fiber.
- 1 box (8 ounces) ZENB Spaghetti made from 100% Yellow Peas
- 2 teaspoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons Calabrian chili paste
- 12 ounces cherry tomatoes, halved
- 4 green onions, cut into 1-inch pieces
- 1/2 cup part-skim ricotta
- 2 tablespoons chopped fresh parsley
Cook ZENB Pasta 1 minute less than directed on package. Reserve 1/4 cup pasta cooking water; drain.2.
Meanwhile, heat oil in large skillet on medium-high heat. Add garlic and chili paste; cook 1 minute. Add tomatoes and reserved pasta water. Cook 15 minutes on medium-low heat, stirring occasionally, until tomatoes burst and thicken the sauce. Add green onions; cook 3-5 minutes, stirring occasionally, until tender.3.
Add pasta; cook 4-5 minutes, stirring frequently, until most liquid is absorbed and pasta is crisp. Top with ricotta and parsley before serving.
Substitute sriracha or harissa for Calabrian chili paste.
Calabrian chili adds smoky heat to any dish. The chilies are often sold in jars at well stocked grocery stores or online.
