ZENB Penne Pasta

INGREDIENTS

  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 1/2 teaspoon each kosher salt & ground black pepper
  • 1 pound skirt steak
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 large red onion, sliced
  • 1 box (12 ounces) ZENB Penne Pasta made from 100% Yellow Peas, uncooked
  • 4 cups water
  • 2 cups low-sodium chicken broth
  • 2 limes, juiced
  • 1/2 cup chopped fresh cilantro

INSTRUCTIONS

Combine spices, salt & pepper in small bowl. Sprinkle half of the spice mixture evenly over both sides of steak.

Heat oil in large deep skillet on medium-high heat until shimmering. Add steak to pan. Cook 5-7 minutes flipping halfway through, until medium-rare doneness. Transfer steak to clean plate; rest 5-10 minutes loosely tented with foil.

Meanwhile, add peppers, onions and remaining spice mix to same skillet. Cook 3-4 minutes on medium-high heat until vegetables are tender-crisp. Stir in ZENB Pasta, water and chicken broth; bring mixture to a boil.

Reduce heat to medium-low. Simmer 11-12 minutes stirring occasionally, until pasta is tender and liquid is mostly absorbed. Add lime juice and cilantro; mix gently until well combined. Slice steak against the grain; arrange over pasta before serving.
