INGREDIENTS
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons garlic powder
- 1/2 teaspoon each kosher salt & ground black pepper
- 1 pound skirt steak
- 1 tablespoon vegetable oil
- 1 red bell pepper, cut into thin strips
- 1 green bell pepper, cut into thin strips
- 1 large red onion, sliced
- 12 ounces ZENB Yellow Pea Penne Pasta, uncooked
- 4 cups water
- 2 cups low-sodium chicken broth
- 2 limes, juiced
- 1/2 cup chopped fresh cilantro
INSTRUCTIONS
1.Combine spices, salt & pepper in small bowl. Sprinkle half of the spice mixture evenly over both sides of steak.
2.Heat oil in large deep skillet on medium-high heat until shimmering. Add steak to pan. Cook 5-7 minutes flipping halfway through, until medium-rare doneness. Transfer steak to clean plate; rest 5-10 minutes loosely tented with foil.
3.Meanwhile, add peppers, onions and remaining spice mix to same skillet. Cook 3-4 minutes on medium-high heat until vegetables are tender-crisp. Stir in ZENB Pasta, water and chicken broth; bring mixture to a boil.
4.Reduce heat to medium-low. Simmer 11-12 minutes stirring occasionally, until pasta is tender and liquid is mostly absorbed. Add lime juice and cilantro; mix gently until well combined. Slice steak against the grain; arrange over pasta before serving.
