ZENB Pasta Agile
Grilled Chicken Chimichurri ZENB Pasta Agile is a fresh burst of tangy flavor that will awaken your taste buds. It is also good source of protein and a good source of fiber.
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh Italian parsley leaves
- 1 tablespoon red wine vinegar
- 1 clove garlic
- 1/8 teaspoon crushed red pepper flakes
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breast
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 medium red bell pepper, chopped
- 2 cups water
- 1 box (12 ounces) ZENB Pasta Agile
- 1/2 cup cherry tomatoes, quartered
Combine cilantro, parsley, vinegar, garlic and crushed red pepper in work bowl of small food processor. Pulse 5-10 seconds, or until coarsely chopped. Add olive oil; process until smooth.2.
Preheat grill pan sprayed with olive oil on medium heat. Season chicken with salt and pepper. Grill 6-8 minutes, turning once, until done. Let chicken rest on clean plate.3.
Heat large skillet sprayed with olive oil on medium-high heat. Add peppers. Cook 1-2 minutes until crisp-tender. Stir in water and ZENB Pasta Agile; cover with lid. Cook 2 minutes, or until pasta is tender. Remove pan from heat. Stir in herb mixture and tomatoes. Serve immediately topped with chicken sliced into thin strips.
This recipe is a great way to use up fresh herbs from the garden or the market. Make extra chimichurri to refrigerate and store for up to 3 days. Serve as a flavorful sauce on grilled meats, fish or vegetables.
