ZENB Pasta Variety

Grilled Chicken Chimichurri ZENB Pasta Agile is a fresh burst of tangy flavor that will awaken your taste buds. It is also good source of protein and a good source of fiber.

INGREDIENTS

  • 1/2 cup fresh cilantro leaves
  • 1/4 cup fresh Italian parsley leaves
  • 1 tablespoon red wine vinegar
  • 1 clove garlic
  • 1/8 teaspoon crushed red pepper flakes
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 medium red bell pepper, chopped
  • 2 cups water
  • 12 ounces ZENB Pasta Agile, uncooked
  • 1/2 cup cherry tomatoes, quartered

INSTRUCTIONS

Combine cilantro, parsley, vinegar, garlic and crushed red pepper in work bowl of small food processor. Pulse 5-10 seconds, or until coarsely chopped. Add olive oil; process until smooth.

Preheat grill pan sprayed with olive oil on medium heat. Season chicken with salt and pepper. Grill 6-8 minutes, turning once, until done. Let chicken rest on clean plate.

Heat large skillet sprayed with olive oil on medium-high heat. Add peppers. Cook 1-2 minutes until crisp-tender. Stir in water and ZENB Pasta Agile; cover with lid. Cook 2 minutes, or until pasta is tender. Remove pan from heat. Stir in herb mixture and tomatoes. Serve immediately topped with chicken sliced into thin strips.

Tasty Tips

This recipe is a great way to use up fresh herbs from the garden or the market. Make extra chimichurri to refrigerate and store for up to 3 days. Serve as a flavorful sauce on grilled meats, fish or vegetables.
