ZENB Pasta Variety
Dirty martinis are not strictly just for happy hour anymore. With ZENB Linguine, tangy olives, and blue cheese, you can create a savory dish without the risk of a hangover! This dish will be the star of your next BBQ or potluck, and it is a good source of protein and fiber.
INGREDIENTS
- 8 ounces ZENB Linguine made from 100% Yellow Peas, uncooked
- 2 1/2 teaspoons olive oil
- 2 teaspoons olive brine
- 1/8 teaspoon freshly ground black pepper
- 1/4 cup pitted Spanish olives, coarsely chopped
- 2 tablespoons chopped fresh parsley
- 2 tablespoons toasted pine nuts
- 2 tablespoons crumbled blue cheese
- 1 lemon, zested
INSTRUCTIONS
1.Cook ZENB Pasta as directed on package. Rinse pasta under cold running water until chilled. Drain well.
2.Meanwhile, whisk oil, brine and pepper in large serving bowl. Add chilled pasta, olives, parsley and pine nuts; mix gently to combine.
3.Garnish with blue cheese and lemon zest before serving.
Tasty Tips
This recipe is inspired by martinis, which are often garnished with large Spanish olives. Substitute green Castelvetrano olives for the Spanish olives.
Chilling the ZENB Pasta under cold running water as directed in our recipes produces the best pasta texture in cold applications. This recipe is best served immediately, as opposed to preparing ahead to refrigerate overnight.
