ZENB Pasta Variety

Perfect for the autumn season or anytime you need your pumpkin flavor fix, this ZENB Penne Pasta recipe delivers on pumpkin spice flavors while staying low calorie and low fat. You'll also get a good source of fiber and good source of vitamin A.

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, sliced
  • 1 tablespoon adobo sauce
  • 1 cup canned pumpkin
  • 1-1/2 cups low-sodium vegetable broth
  • 1/2 teaspoon kosher salt
  • 12 ounces ZENB Yellow Pea Penne Pasta made from 100% Yellow Peas, uncooked
  • 1/4 cup 2% milk
  • 1/4 cup shredded Parmesan cheese
  • 1/2 teaspoon freshly ground black pepper

INSTRUCTIONS

Heat oil in large pot on medium-high heat. Add onion; cook 5-7 minutes until translucent. Add garlic; cook 30 seconds stirring continuously until fragrant. Stir in adobo sauce, pumpkin, broth and salt; bring mixture to a low boil. Reduce heat to medium-low; simmer, stirring occasionally, for 10 minutes

Meanwhile, cook ZENB Pasta as directed on package. Reserve 1/2 cup pasta cooking water; drain.

Whisk milk into pumpkin sauce. Add pasta and reserved pasta water to pot. Cook 3 minutes, until heated through and well combined. Garnish with Parmesan and pepper before serving.

Tasty Tips

Canned chipotle peppers are sold packed in adobo sauce. Look for chipotle peppers in adobo in the Mexican section of the grocery store. Wrap leftover chipotle peppers individually in plastic wrap before storing in the freezer.

For an extra kick of heat, add 2 minced chipotle peppers in addition to the adobo.
