ZENB You Pick It Pack

ZENB Spaghetti is going crazy for peas on peas on peas! This delicious concoction will have you seeing green while staying low in calories and being a good source of fiber.

INGREDIENTS

  • 8 ounces ZENB Spaghetti made from 100% Yellow Peas, uncooked
  • 2 tablespoons extra virgin olive oil
  • 1 shallot, finely chopped
  • 1 cup chopped baked ham (about 1/4 pound)
  • 2 cups sugar snap peas, trimmed, cut into bite-size pieces
  • 3 cups loosely packed fresh pea shoots, coarsely chopped
  • 1/2 cup dill sprigs or mint leaves
  • 1/4 cup shaved Parmesan cheese

INSTRUCTIONS

Cook ZENB Pasta 1 minute less than directed on package. Reserve 1/2 cup pasta cooking water. Drain.

Meanwhile, heat oil, shallots and ham in large skillet on medium heat. Cook 2-3 minutes, stirring occasionally. Add reserved pasta water, pasta and sugar snap peas. Toss gently until peas are crisp-tender and pasta is cooked through. Remove pan from heat.

Stir in pea shoots and dill. Mix gently until pea shoots are wilted. Sprinkle with Parmesan before serving.

Tasty Tips

This recipe is a great way to use up holiday meal leftovers. Substitute thick-sliced deli ham for the baked ham.

Pea shoots are the young stems and leaves of pea plant vines available at farmers markets in the spring. They have a sweet, delicate flavor and require very little cooking.

This dish can be served warm or chilled as a cold pasta salad dish.
