ZENB Pasta Variety
We partnered with @fitfoodiele, who created an amazing ZENB Pasta dish loaded with cheese, garlic, and veggies! Using ZENB Rotini Pasta this dish will help maintain healthier eating habits while not sacrificing on any flavor. This new favorite is a good source of protein, low in fat and low in calories. Try this dish for a filling quick lunch or dinner.
INGREDIENTS
- 1 pound chicken breast chunks
- 1 tablespoon coconut aminos
- 2 cloves garlic, minced
- 3 tablespoons vegan butter, divided
- 2 large zucchini, chopped
- 1 orange bell pepper, chopped
- 2 cups mushrooms, chopped
- 1 cup sweet corn kernels
- 1 teaspoon garlic salt
- 1/2 teaspoon cracked black pepper
- 8 ounces ZENB Yellow Pea Rotini Pasta, cooked
- 3/4 cup vegan Parmesan, shredded
- 1 cup loose leaf baby spinach
- 1/2 cup grape tomatoes, halved
INSTRUCTIONS
1.Add chicken breast chunks, coconut aminos and garlic to a bowl and marinate for 30 minutes minimum. Overnight is best!
2.Set your skillet to medium-high heat and add 2 tablespoons of vegan butter. Once melted, add chicken; toss and stir until just cooked through and there is no more pink. Remove chicken from skillet and set aside, covered.
3.Add remaining butter to your skillet on medium high heat along with zucchini, bell pepper, mushrooms and corn. Stir vegetables around and cook for about 7-9 minutes on high heat; sprinkle in garlic, salt & pepper.
4.Add chicken back in along with ZENB Pasta, Parmesan cheese and toss around for 1-2 minutes. Shut off the heat and add spinach & tomatoes; give everything one last toss as the spinach wilts🔥serve hot with more grated parmesan on top!🔥
