INGREDIENTS
- 1 large head cauliflower, stalk removed, cut into florets
- 1 cup shredded part-skim mozzarella cheese, divided
- 1/4 cup finely grated parmesan cheese
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 2 large eggs, beaten
- 1 cup ZENB Sweet Carrot and Tomato Marinara Pasta Sauce
- 1/4 cup loosely packed fresh basil leaves
- 1 teaspoon crushed red pepper flakes
INSTRUCTIONS
1.Preheat oven to 450°F. Pulse cauliflower florets in food processor until mixture resembles rice. Transfer to microwave-safe bowl; cook on high 5 minutes or until tender. Let stand until cool enough to handle. Transfer cauliflower to clean kitchen towel; squeeze out excess liquid.
2.Combine cauliflower, 1/2 cup mozzarella, Parmesan, oregano, garlic and eggs in large bowl. Form mixture into four, 5-inch-wide disks on parchment lined baking sheet.
3.Bake 25-30 minutes or until edges begin to brown. Spoon ZENB Sauce onto crusts, leaving 1/2-inch border. Sprinkle remaining mozzarella over crusts. Bake 9-10 minutes until cheese is melted and bottom of crusts are golden. Garnish with basil and red pepper before serving.
Tasty Tips
Other toppings like sliced onions, peppers, mushrooms or pepperoni work well.
To save time, pre-made cauliflower crusts are available in the freezer aisle of a well-stocked grocery store.
