ZENB Elbows Pasta

Pasta for breakfast can now be a staple in your household by trying ZENB Breakfast Pasta Bake. This combination is perfect to impress guests for an easy breakfast or brunch. ZENB Elbows Pasta makes a hearty dish combined with italian chicken sausage, incredible eggs and melty cheese. Serve this with some nice toasty bread and your favorite breakfast drink for a mouthwatering crowd pleaser.

INGREDIENTS

  • 1 box (12 ounces) ZENB Elbows Pasta made with 100% Yellow Peas, uncooked
  • 2 teaspoons olive oil
  • 12 ounces fully-cooked Italian chicken sausage, cut into 1/2-inch-thick slices
  • 2 large green bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 teaspoon each kosher salt & ground black pepper
  • 1/4 teaspoon ground black pepper
  • 10 eggs, beaten
  • 1-1/2 cups shredded mozzarella cheese, divided
  • 2 tablespoons chopped chives

INSTRUCTIONS

Preheat oven to 375°F. Cook pasta as directed on package. Drain.

Meanwhile, heat oil in large skillet on medium-high heat. Add sausage; cook 4-5 minutes until browned. Stir in peppers, onions, salt & pepper. Cook 5 minutes, or until softened.

Transfer sausage mixture to 13x9-inch baking dish sprayed with nonstick cooking spray. Combine eggs, pasta and half the mozzarella in large bowl. Spoon over sausage mixture in baking dish. Sprinkle with remaining cheese. Bake 25-30 minutes or until eggs are set. Remove from oven; let stand 10 minutes before serving sprinkled with chives.

Tasty Tips

Substitute sliced mushrooms for the sausage to make this a meatless dish.
