INGREDIENTS

  • 8 ounces ZENB Spaghetti, uncooked
  • 2 teaspoons olive oil
  • 8 ounces oyster mushrooms, stems removed, torn into large bite-size pieces
  • 1 small shallot, thinly sliced
  • 3 cups radicchio, stems removed and cut into 2-inch pieces
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons toasted pistachios, chopped

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Reserve 1/4 cup of pasta cooking water; drain.

Heat oil in large skillet on medium-high heat. Add mushrooms; cook for 5-7 minutes, until golden-brown. Add shallots; cook for 1-2 minutes, until tender. Stir in radicchio; cook for 1-2 minutes, until tender.

3.

Stir in pasta and reserved pasta water; cook 1-2 minutes, until sauce thickens. Top with basil and pistachios before serving.

Tasty Tips

Substitute oyster mushrooms with mixed wild mushrooms or cremini mushrooms.
