ZENB Pasta Agile

Bring the comfort of home to your table with ZENB Herb & Apple Pasta Agile Stuffing. This crisp fall recipe is a good source of protein and an excellent source of fiber.

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 pound sliced mushrooms
  • 1 teaspoon kosher salt, divided
  • 2 ribs celery, finely chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh sage
  • 1 Honeycrisp apple, cored, cut into 1/2-inch pieces
  • 2 cups vegetable stock
  • 1 box (12 ounces) ZENB Pasta Agile
  • 1/2 cup toasted pepitas
  • 2 tablespoons finely chopped Italian parsley

INSTRUCTIONS

1.

Heat oil in large skillet on medium heat. Add mushrooms and ½ teaspoon salt. Cook 5-6 minutes, stirring occasionally, until most liquid is evaporated. Add celery, onion, garlic, sage and remaining salt; cook 3-4 minutes until translucent.

Add apples and broth; gently scrape browned bits from bottom of pan until mixture is simmering. Stir in Agile. Cover and cook 2 minutes until pasta is tender.

3.

Stir in pepitas and parsley; serve immediately.

Tasty Tips

Utilize pre-cut produce like pre-sliced mushrooms, chopped celery and onion from the produce department to save time.
