ZENB Pasta Agile
Bring the comfort of home to your table with ZENB Herb & Apple Pasta Agile Stuffing. This crisp fall recipe is a good source of protein and an excellent source of fiber.
- 2 tablespoons olive oil
- 1 pound sliced mushrooms
- 1 teaspoon kosher salt, divided
- 2 ribs celery, finely chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons chopped fresh sage
- 1 Honeycrisp apple, cored, cut into 1/2-inch pieces
- 2 cups vegetable stock
- 1 box (12 ounces) ZENB Pasta Agile
- 1/2 cup toasted pepitas
- 2 tablespoons finely chopped Italian parsley
Heat oil in large skillet on medium heat. Add mushrooms and ½ teaspoon salt. Cook 5-6 minutes, stirring occasionally, until most liquid is evaporated. Add celery, onion, garlic, sage and remaining salt; cook 3-4 minutes until translucent.2.
Add apples and broth; gently scrape browned bits from bottom of pan until mixture is simmering. Stir in Agile. Cover and cook 2 minutes until pasta is tender.3.
Stir in pepitas and parsley; serve immediately.
Utilize pre-cut produce like pre-sliced mushrooms, chopped celery and onion from the produce department to save time.
