INGREDIENTS
- 12 ounces ZENB Yellow Pea Rotini Pasta, uncooked
- 1 tablespoon olive oil
- 6 mini bell peppers, cut into 1/2 inch strips
- 1 small red onion, thinly sliced
- 1/2 teaspoon each kosher salt & ground black pepper
- 1 jar (15 ounces) or 2 cups light alfredo sauce
- large cloves garlic, thinly sliced
- yellow squash, cut in half lengthwise, cut into 1/4 inch thick slices
- 2 cups loosely packed baby spinach
- 2 tablespoons grated Parmigiano Reggiano
- 1 tablespoon small Italian parsley leaves
INSTRUCTIONS
1.Cook ZENB Pasta according to package directions. Reserve 1/4 cup pasta cooking water; drain.
