We partnered with @lowstoluxe, who had been testing a few meatball recipes lately and finally settled on a family favorite. INGREDIENTS

Meatballs
  • 1 pound lean ground beef
  • 1 egg
  • 1 tablespoon basil, finely chopped
  • 1 tablespoon fresh Italian parsley, finely chopped
  • 2 tablespoons Italian seasoning
  • 1 teaspoon chili flakes
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
Sauce
  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 can (28 ounces) crushed tomatoes
  • 1 bay leaf
  • 1 tablespoon fresh Italian parsley, finely chopped
  • 1 teaspoon ground black pepper
  • 1 teaspoon chili flakes (add more to your liking)
  • freshly grated Parmesan for garnishing
  • 1 box (12 ounces) ZENB Penne Pasta made from 100% Yellow Peas, cooked

INSTRUCTIONS

1.

Preheat your oven to 400 degrees. Combine all ingredients for meatballs in bowl and mix well.

2.

Coat baking pan with olive oil. Roll meatballs into even sizes and place on pan.

3.

Bake for 15-20 minutes or until cooked through.

4.

Heat olive oil in medium pan for a few minutes then add onion, garlic, tomatoes, bay leaf and black pepper. Cook on low for 15 minutes.

5.

Add chili flakes and meatballs. Mix well. Heat for an additional 10 minutes.

6.

Serve garnished with Parmesan over cooked ZENB Penne Pasta.
