ZENB Pasta Agile

Sweet and salty caramelized Brussels sprouts create a satisfying side or main meal using ZENB Pasta Agile. This dish is a good source of fiber and perfect for a crowd.

INGREDIENTS

  • 1/4 pound bacon, cut into 1/4-inch pieces
  • 2 cups shaved Brussels sprouts
  • 2 cups unsalted vegetable broth
  • 1 1/2 teaspoons fresh thyme leaves, divided
  • 1 box (12 ounces) ZENB Pasta Agile made from 100% Yellow Peas
  • 2 tablespoons chopped toasted hazelnuts
  • 2 tablespoons grated Parmesan

INSTRUCTIONS

1.

Heat a large nonstick skillet on medium heat. Add bacon; cook 4-6 minutes, stirring occasionally, until crisp. Transfer bacon to paper-towel-lined-plate.

Meanwhile, increase heat to medium-high. Add Brussels sprouts to drippings in same skillet. Cook 2-3 minutes, stirring occasionally until deep golden brown.

3.

Add broth and 1 teaspoon thyme; bring mixture to the boil. Stir in Pasta Agile. Cover and cook 2 minutes on medium heat, until pasta is tender. Remove pan from heat; stir in reserved bacon.

4.

Garnish with hazelnuts, Parmesan and remaining thyme before serving.
