ZENB Pasta Variety

Planning dinner for everyone can be daunting, but baked cheesy dishes always comes in clutch. Using ZENB Cavatappi, craft an elevated comfort dish that is a good source of protein and fiber.

INGREDIENTS

  • 8 ounces ZENB Yellow Pea Cavatappi, uncooked
  • 1 tablespoon olive oil
  • 2 pounds butternut squash peeled, seeded, cut into 1/2-inch cubes
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 tablespoon gochujang
  • 2 green onions, thinly sliced
  • 1 teaspoon toasted sesame seeds

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Reserve 1/2 cup pasta cooking water; drain.

Meanwhile, heat oil in large skillet on medium-high heat. Add squash; cook 8-10 minutes, stirring occasionally until golden-brown. Transfer squash, cheese, milk, and gochujang to blender. Blend 1 min. on high, until smooth.

Return blended mixture to same skillet. Stir in pasta; cook 1-2 minutes on medium until evenly coated and heated through. Garnish with green onions and sesame seeds before serving.

Tasty Tips

Gochujang is a sweet, savory, and spicy Korean fermented chili paste condiment. It is available in large grocery stores, Asian markets or online.

Gochujang is a great ingredient to add to stews, stir-frys, dipping sauces, marinades for a boost of flavor.
