ZENB Pasta Variety
ZENB Spaghetti gets tipsy with red wine and jarred tomato sauce for a craveable dish ready in 20 minutes. It is also a good source of fiber.
INGREDIENTS
- 8 ounces ZENB Spaghetti Pasta made from 100% Yellow Peas, uncooked
- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 2 cups no sugar added jarred tomato sauce
- 1/2 cup red wine
- 2 tablespoons chopped fresh basil, divided
- 1 tablespoon grated Parmesan cheese
INSTRUCTIONS
1.Cook ZENB Pasta as directed on package. Reserve 1/4 cup pasta cooking water; drain.
2.Heat oil in large skillet on medium-high heat. Add garlic; cook 1 minute, until fragrant. Stir in sauce, wine and reserved pasta water. Cook 4-6 minutes, stirring occasionally, until reduced by half. Add cooked pasta and 1 tablespoon basil. Cook 2-3 minutes, tossing gently, until pasta is evenly coated.
3.Sprinkle with remaining basil and Parmesan before serving.
Tasty Tips
Use a dry red wine like cabernet sauvignon or merlot.
