- 1 box (8 ounces) ZENB Spaghetti Pasta made from 100% Yellow Peas
- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 1 carton (15.5 ounces) ZENB Sweet Carrot and Tomato Marinara Gourmet Pasta Sauce
- 1/2 cup red wine
- 2 tablespoons chopped fresh basil, divided
- 1 tablespoon grated Parmesan cheese
Cook ZENB Pasta as directed on package. Reserve 1/4 cup pasta cooking water; drain.2.
Heat oil in large skillet on medium-high heat. Add garlic; cook 1 minute, until fragrant. Stir in ZENB Pasta Sauce, wine and reserved pasta water. Cook 4-6 minutes, stirring occasionally, until reduced by half. Add cooked pasta and 1 tablespoon basil. Cook 2-3 minutes, tossing gently, until pasta is evenly coated.3.
Sprinkle with remaining basil and Parmesan before serving.
Use a dry red wine like cabernet sauvignon or merlot.
