ZENB Pasta Agile and Roasted Red Bell Pepper Gourmet Pasta Sauce tossed with veggies and chicken get a massive makeover with the addition of turmeric and saffron for a truly flavorful meal. This easy dinner can be prepared in under 30 minutes. It is an excellent source of protein and a good source of fiber.
INGREDIENTS
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breast, cut into bite size pieces
- 1/2 teaspoon kosher salt
- 1 small red bell pepper, chopped
- 3 green onions, thinly sliced
- 2 cloves garlic, minced
- 1/4 teaspoon ground turmeric
- 3 strands saffron
- 2 cups low-sodium chicken broth
- 1 box (12 ounces) ZENB Pasta Agile
- 1 carton (15 ounces) ZENB Roasted Bell Pepper Gourmet Sauce
- 1/2 lemon, juiced
- 1/4 cup frozen peas
- 1/4 cup chopped fresh cilantro
INSTRUCTIONS
1.Heat oil in large skillet on medium-high heat. Season chicken with salt; add to skillet. Cook 3-4 minutes, stirring occasionally, until browned.
2.Add peppers and green onions; cook 2-3 minutes until crisp-tender. Add garlic, turmeric and saffron; cook 30 seconds until fragrant.
3.Stir in broth, ZENB Pasta Agile and lemon juice. Top with peas; cover with lid. Cook 2 minutes, or until pasta is tender. Remove pan from heat; stir gently. Sprinkle with cilantro before serving.
Tasty Tips
Substitute 1/8 teaspoon finely grated fresh turmeric. Fresh turmeric is often sold in the produce section of Southeast Asian and Indian grocery stores.
