ZENB Sweet Carrot Gourmet Pasta Sauce makes its debut on Taco Tuesday for a variation on Chicken Tinga. This new favorite is a good source of protein and ready in about 30 minutes.

INGREDIENTS

  • 1 teaspoon olive oil
  • 1-1/2 pounds small boneless skinless chicken breasts
  • 1 teaspoon adobo seasoning
  • 1 carton (15.5 ounces) ZENB Sweet Carrot and Tomato Marinara Gourmet Pasta Sauce
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 6 (6-inch) thin yellow corn tortillas, warmed
  • 1 small red onion, chopped
  • 1/4 cup chopped fresh cilantro
  • 2 limes, cut into wedges

INSTRUCTIONS

1.

Heat oil in large skillet on medium heat. Season both sides of chicken breasts with adobo seasoning. Cook 8-9 minutes, turning once, until golden brown and done. Cool slightly.

Shred chicken with 2 forks. Return chicken to skillet; add ZENB Sauce, oregano, and cumin. Cook 2-3 minutes on medium heat until warmed through.

3.

Serve chicken and sauce with tortillas and remaining ingredients.

Adobo seasoning is a staple seasoning blend in Latin American, Caribbean and Spanish cuisine. Adobo seasoning is a combination of garlic powder, onion powder, oregano, salt, pepper, and dried citrus zest.
