ZENB Pasta Variety

When you want some island vibes, Hawaiian Chicken ZENB Pasta Salad will transport you. ZENB Elbows Pasta is featured in this delicious side dish or main meal that can be ready in under 30 minutes. This pasta salad is good source of protein and a good source of fiber.

INGREDIENTS

  • 12 ounces ZENB Elbows Pasta made from 100% Yellow Peas, uncooked
  • 1/4 cup nonfat Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 teaspoons apple cider vinegar
  • 1/8 teaspoon sugar
  • 3 cups shredded rotisserie chicken meat
  • 2 stalks celery, chopped
  • 2 medium carrots, cut into matchsticks
  • 4 green onions, chopped
  • 3 tablespoons chopped fresh parsley

INSTRUCTIONS

Cook ZENB Pasta as directed on package. Rinse pasta under cold running water until chilled. Drain well.

Whisk yogurt, mayonnaise, vinegar and sugar together in a large bowl. Add pasta, chicken, celery, carrots, green onions and parsley; mix gently to combine.

Tasty Tips

Chilling the ZENB Pasta under cold running water, as directed in our recipes, produces the best pasta texture in cold applications. This recipe is best served immediately, as opposed to preparing ahead to refrigerate overnight.
